Section 3- Mixing and Searing:
Now that the ingredients are all gathered together, it is
time to mix and season the meat. It is important to not over season the meat as it might make
the taste to powerful.
- In a
large mixing bowl tear apart and place the ground chuck and ground sirloin
into the bowl.
- In a
small mixing bowl whisk the 3 large eggs and pour this into the large bowl
with the meat.
- Now
pour into the large mixing bowl the steak sauce, toasted bread cubes,
black pepper, salt, and Savory.
- Next
add in the sweet basil and garlic powder. In the above sections the
amounts are not listed (I normally feel these two out), so the method to
spread them into the mix is below.
- Now
that all the ingredients are in the bowl, using your hands mix everything
together until a giant ball of meat is formed. Taking a large cookie
sheet, place a layer of wax paper on top of it. Now take the ball of meat
and break it into four balls and then break each of those four balls into
two balls and place them on top of the was sheet.
- Next
take a cloth towel and lightly dampen it. Fold once and place on the
counter. Take one of the two small
pans and place on the towel bottom side facing up (the flat smooth part,
not where cake batter is poured in). Place a piece of wax paper on top of
the pan.
- Now
take a meat ball and place onto the center of the pan. Take another piece
of wax paper place it over the meat ball. Next take the other small pan and
place on top of the second piece of wax paper and slowly apply pressure to
make a circular patty. The patty
should be between ¾ of an inch to 1 inch in thickness. Now place the
formed patty back onto the cookie sheet.
- Repeat
these steps for the other 7 meat balls.
- Now
that the patties are made, it is time to sear them. Taking a large cast iron skillet, place
it onto the stove at high heat. Pour
about 1 table spoon of extra virgin olive oil into the pan to cover it
lightly with oil.
- Once
the pan is hot enough (sprinkle water into the pan. If it evaporates on
contact it is ready) take the burger patties and place 3 to 4 of them into
the skillet. It will take about 45
seconds for a side to sear, so keep watch. It will almost be ready to flip
when the edges of the patty that is on the skillet begin to brown.
- Using
a spatula, gently flip the patties. A good method is to get the patty
completely onto the spatula. Then place your hand on the top of the patty
and slowly flip staying close to the pan.
Oil might pop out a bit, but it should be fine as long as it is
done slowly and gently.
- When
both sides of the patties are seared place them onto a large pan or plate.
- Repeat
this step for the other patties.
