Food Allergies

A food allergy is an immunologic response to a food protein. Roughly 12 million Americans are allergic to some kind of food, and those numbers are rising. The most common allergies are: shellfish, fish, eggs, milk, peanuts and sesame seeds.
Celiac Disease
However, people with Celiac Disease are allergic to gluten, the protein that makes bread sticky, and thus are limited to eating Gluten Free Foods. Gluten is found in all forms of wheat, including durum, semolina, spelt, kamut, einkorn, and faro, and grains like rye, barley and triticale. Although the symptons can be minor and confused with other sicknesses, like diarrhea, weight loss, constipation, fatique and abdominal pain, continued use of gluten by a Celiac can result in stomach or colon cancer.
