Making Your Roux


1. You will be using the remaining vegetable oil to         make your roux.


2. Make sure the oil is at a medium high                           temperature, you can check this by tossing a             pinch of flour into the oil. If it bubbles the oil is           ready.


3. Now you can add the remaining flour, whisking           constantly.


4. Make sure the roux never burns or sticks.


5. It should be done after about 20 minutes, or when     it is the color of milk chocolate.
