Cooking your Gumbo

1. Add the chopped onions, bell peppers, celery, and     garlic to the roux. This will stop the roux from             over cooking.

2. Let the vegetables cook for about 3-5 minutes.


3. Add your water or chicken stock and let it come         to a boil.


4. Let the gumbo boil for about 15 minutes, stirring        occasionally to incorporate the roux.


5. Once 15 minutes has passed you can take your          browned chicken and add it to the gumbo.


6. Also add the salt and the black and cayenne               pepper.


7. Add your sausage and andouille.


8. Cover and let simmer for about an hour, or longer       if you wish
.

9. Begin cooking your rice at least 20-25 minutes            before you are ready to eat!


10. Add the parsley and green onions about 10                 minutes before serving and enjoy!
