Prep for the Gumbo

1. Cut whole chicken into pieces and set aside (or         purchase a pre-cut chicken)
.

2. Cut up sausage to store in the refrigerator.


3. Chop up the andouille and store in the                          refrigerator
.

4. Wash all vegetables that you will cooking
.

5. After cleaning, cut up the “holy trinity” of onions,       bell peppers, and celery
.

6. Smash garlic and mince, then set aside with other     prepared ingredients
.

7. Cut up green onion tops and parsley and                      refrigerate.


8. You are ready to begin cooking!


   Starting the Chicken

1. Pour vegetable oil in to 6-quart pot and put on            medium high heat.


2. Add the cut up chicken and cook until browned, it     does not have to be thoroughly cooked
.

3. Do not over crowd the chicken so it browns                 evenly
.

4. Once the chicken is browned, remove with tongs       and set it on a plate draped with paper towels
.

5. Once the chicken is ready, you can begin the             roux.
