| Prep for the Gumbo 1. Cut whole chicken into pieces and set aside (or purchase a pre-cut chicken). 2. Cut up sausage to store in the refrigerator. 3. Chop up the andouille and store in the refrigerator. 4. Wash all vegetables that you will cooking. 5. After cleaning, cut up the “holy trinity” of onions, bell peppers, and celery. 6. Smash garlic and mince, then set aside with other prepared ingredients. 7. Cut up green onion tops and parsley and refrigerate. 8. You are ready to begin cooking! Starting the Chicken 1. Pour vegetable oil in to 6-quart pot and put on medium high heat. 2. Add the cut up chicken and cook until browned, it does not have to be thoroughly cooked. 3. Do not over crowd the chicken so it browns evenly. 4. Once the chicken is browned, remove with tongs and set it on a plate draped with paper towels. 5.
