Teach Philosophy 101 - a very extensive site.
American Philosophical Association's Teaching Resources page.
The Open Syllabus Project - Lots of syllabuses plus statistical evaluations (e.g., what is the most assigned textbook for a Introduction to Philosophy course, etc.)
Topic Specific:
American Society for Aesthetics - numerous links and on-line articles on teaching aesthetics.
The Foundation For Critical Thinking - includes essays on teaching critical thinking and many other resources.

There was also a series of books on teaching ethics entitled "The Teaching of Ethics" and published by The Hastings Center around 1980. It contained roughly a dozen volumes, many specific to a certain area of applied ethics (e.g., one on teaching ethics in the military, one on teaching bioethics, etc.).
